Family Meat Loaf Recipe

Ingredients
  • 3/4 c whole milk .
  • 3/4 c sauteed sliced white mushrooms (optional) .
  • 1 lb ground pork .
  • 1 medium onion, sliced into rings .
  • 1/2 lb ground chicken or ground turkey .
  • 1/4 c fresh flat-leaf parsley, minced .
  • 1 tsp coarse-ground black pepper .
  • 2/3 c sauteed minced celery (about 2 ribs) .
  • 2 tsps kosher salt .
  • 2 1/4 c fresh bread, torn into small pieces .
  • red pepper flakes, to taste .
  • 1/2 c sliced bell peppers (sauteed, we prefer red or yellow but green is ok too) .
  • 8 fresh thyme sprigs .
  • 4-6 tsps low sodium soy sauce .
  • 2 tsps fresh thyme .
  • 1 1/2 c ketchup .
  • 3 large eggs .
  • MEAT LOAF .
  • GLAZE .
  • 6 slices bacon or sliced pancetta .
  • 1/4-1/2 c worcestershire sauce .
  • 1 1/2 lbs ground beef .
  • 1/4 c sliced onions (sauteed, we prefer them this way) or raw onions .
  • 1 tbsp dry mustard .
  • 1 c sliced onions (sauteed, we prefer them this way) or raw onions .
  • 4 garlic cloves, minced .
  • 1/4-1/2 c light brown sugar

Directions
  • Step #1 MAKE THE KETCHUP GLAZE:.
  • Step #2 Combine the ketchup, Worcestershire sauce, brown sugar, soy sauce in a medium bowl & stir until mixd.
  • Step #3 Set aside.
  • Step #4 SAUTÉED VEGETABLES:.
  • Step #5 Sauté vegetables in a non-stick pan sprayed with non-stick olive oil spray, for about 8 to 10 mins, to take out the bite.
  • Step #6 MAKE MEATLOAF:.
  • Step #7 Preheat oven to 400°F.
  • Step #8 Combine the bread & the milk in a small bowl & let sit 5 mins.
  • Step #9 Combine onion, garlic, mustard, salt, celery, eggs, thyme, parsley, mushrooms(if using), bell peppers, black pepper & crushed red pepper flakes(if using) In a large-ish bowl.
  • Step #10 Add the bread, meat & 1/3 c of the ketchup glaze & toss carefully with your hands.
  • Step #11 Be careful not to over mix, it should be soft but hold its shape.
  • Step #12 BAKING THE MEATLOAF:.
  • Step #13 Line a baking sheet with parchment paper.
  • Step #14 Transfer the meat mixture to the prepared pan, form into a 16- by 5-inch loaf & coat with 1/3 c of the ketchup glaze.
  • Step #15 Combine the onion rings with 2 tbsps of ketchup glaze in a small bowl.
  • Step #16 Spread the coated onions over the top of the meat loaf.
  • Step #17 Place the thyme sprigs over the onions & twist the bacon or pancetta slices in diagonals over the thyme.
  • Step #18 Place on center rack of oven & bake for 15 mins.
  • Step #19 Reduce oven temperature to 350°F & bake for approximately 50 mins more.
  • Step #20 Remove from oven & allow to rest 15 mins before serving.
  • Step #21 Serve with remaining ketchup glaze, roasted garlic mashed potatoes, gratinee of spinach with warm herbed biscuits.
