Healthier Sweet And Sour Chicken Stir Fry Recipe

Ingredients
  • 1 1/2 oz thin sliced baby carrots .
  • 3 oz snap peas, cut in half widthwise .
  • 1 1/2 tsps cider vinegar .
  • 1 tsp minced garlic .
  • 1 tsp cornstarch .
  • 3 oz sliced celery .
  • 1/2 tsp ground ginger .
  • 8 oz boneless skinless chicken breasts, cut into 1 pieces .
  • 2 tbsps light soy sauce .
  • 1/2 (3 oz) bell peppers, sliced .
  • 1 1/2 tsps Sugar Twin or Splenda sugar substitute .
  • 1/2 c canned pineapple in juice, undrained

Directions
  • Step #1 Spray a non-stick skillet with cooking spray.
  • Step #2 Sauté garlic for 2 mins.
  • Step #3 Add chicken & brown over med-heat/flame.
  • Step #4 Add bell pepper, celery, carrot, & pea pods & stir fry for 5-7 mins, until carrots soften just a bit.
  • Step #5 In a small bowl, mix cornstarch & soy sauce & mix.
  • Step #6 Pour into skillet, Sugar Twin, vinegar, along with pineapple, & ginger.
  • Step #7 Stir well & bring to a boil.
  • Step #8 Reduce heat & let simmer 1-2 mins until sauce thickens.
  • Step #9 Serve over hot rice, or cabbage for a "lower carb" option.
