Rubens In A Dish Recipe

Ingredients
  • 1 tbsp butter .
  • 1 lb corned beef, sliced .
  • 1 lb swiss cheese, grated .
  • 1 (15 oz) can sauerkraut, drained .
  • 6 slices rye bread, toasted .
  • 1/2 c onions, thinly sliced .
  • 1/4 c mayonnaise .
  • 3/4 c thousand island dressing

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Spray 2 quart casserole dish with non-stick cooking spray.
  • Step #3 Toast the rye bread & lightly butter 1 side only.
  • Step #4 Arrange 3 slices (butter side UP) in bottom of casserole dish (cut to fit if you so desire).
  • Step #5 Sprinkle top 1/3 c of grated Swiss cheese over buttered toast.
  • Step #6 Arrange drained sauerkraut over the cheese & bread.
  • Step #7 Mix salad dressing with the mayonnaise in separate bowl & spoon 1/2 of the mixture over the sauerkraut.
  • Step #8 Chop the corned beef into bite size piece & spread evenly in the dish.
  • Step #9 Top with very thinly sliced onion & then 1/3 c grated Swiss cheese & remaining corned beef.
  • Step #10 Finish the dish with remaining Swiss cheese & remaining dressing mixture.
  • Step #11 Bake 15-20 mins or until bubbly.
  • Step #12 Place remaining 3 slices of toasted Rye bread (buttered side down) over top & continue baking for 5-10 mins.
  • Step #13 Let sit for 5 mins.
  • Step #14 Cut & serve hot.
