Ingredients
1/2 c merlot .
2 large eggs .
1/2 tsp salt .
1 tsp vanilla extract .
1 c granulated sugar .
1/3 c butter, softened .
8 oz dark chocolate, baking bar (53% Cacao, broken into small sections) .
1 1/3 c all-purpose flour .
6 oz pkg. dried sweet cherries (1 1/4 c, sliced)
Directions
Step #1 Preheat oven to 350º F.
Step #2 Grease 9-inch-square baking pan.
Step #3 Microwave dried cherries & merlot wine in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 min.
Step #4 Set aside for 15 mins, stirring every once in awhile.
Step #5 Drain cherries; discard wine.
Step #6 Microwave chocolate in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 min; STIR.
Step #7 Sections may retain some of their original shape.
Step #8 If necessary, microwave at extra 10- to 15-second intervals, stirring just until smooth; cool to about room temp.
Step #9 Combine flour & salt in small bowl.
Step #10 Beat sugar & butter in medium mixer bowl until well mixed.
Step #11 Add eggs & beat until light & fluffy.
Step #12 Beat in melted chocolate & vanilla extract.
Step #13 Stir in flour mixture until mixed.
Step #14 Stir in drained cherries.
Step #15 Spread into prepared pan.
Step #16 Bake for 33 to 37 mins or until wooden pick inserted in center comes out slightly sticky.
Step #17 Cool completely in pan on wire rack.
Step #18 Cut into bars.
Step #19 NOTE: Sweetened dried cranberries can be substituted for the dried cherries.
