Italian Sausage And Vegetable Stew Recipe

Ingredients

2 medium zucchini, sliced .
1 (16 oz) package frozen mixed vegetables .
4 garlic cloves, minced .
1 (14 1/2 oz) can Italian-style tomatoes, undrained (sliced) .
1 lb Italian sausage, cut into 1-inch pieces (hot or mild) .
1 (4 1/2 oz) jar sliced mushrooms, drained

Directions

Step #1 Cook sausage in large saucepan, covered, over medium to medium high heat for 5 mins or until browned; pour off drippings.
Step #2 Add frozen vegetables, tomatoes, zucchini, mushrooms & garlic; bring to a boil.
Step #3 Reduce heat to low, simmer, covered for 10 mins.
Step #4 Cook, uncovered, 5 to 10 mins or until juices have thickened slightly.
