Chicken And Rice Casserolei Recipe

Ingredients
  • 2 bay leaves
  • 1 onion, quartered
  • 1 (4 lb) whole chicken
  • 8 tbsps all-purpose flour
  • salt & pepper to taste
  • 2 c shredded Cheddar cheese
  • 1 c chicken stock
  • 2 stalks celery
  • 1 c cooked white rice
  • 2 c milk
  • 1 (4.5 oz) can sliced mushrooms
  • 1/3 c butter

Directions
  • Step #1 In a large pot boil the chicken with the onion, celery & bay leaves until done.
  • Step #2 Let chicken cool until you can handle it.
  • Step #3 Remove chicken meat from the bones & cut into small pieces.
  • Step #4 Preheat oven to 375 degrees F (190 degrees C).
  • Step #5 In a saucepan over med-heat/flame melt the butter.
  • Step #6 Stir in the flour & cook for about 1 min.
  • Step #7 Slowly stir in the the cold milk & chicken stock & cook mixture until thick.
  • Step #8 Stir in the cheese.
  • Step #9 In a large bowl mix the chicken, rice & mushrooms together.
  • Step #10 Stir in the cheese sauce & season this with salt & pepper.
  • Step #11 Place mixture in a 1 1/2 quart casserole dish.
  • Step #12 Bake at 375 degrees F (190 degrees C) for about 30 mins or until bubbly.
