Cranberry Couscous Salad Recipe

Ingredients
  • 1/2 c sliced almonds, toasted .
  • 1/3 c vegetable oil .
  • 1/3 c sliced green onions .
  • 2 tbsps rice vinegar .
  • 2 tbsps sliced fresh mint .
  • 1 tsp ground cinnamon .
  • 1 1/2 c chicken broth or vegetable broth .
  • 1/2 c dried cranberries .
  • 1 c uncooked couscous .
  • 1/4 tsp ground cumin

Directions
  • Step #1 Combine broth, cranberries, cinnamon, & cumin in a medium saucepan.
  • Step #2 Bring to a boil.
  • Step #3 Remove broth from heat & stir in the couscous.
  • Step #4 Cover up & let this stand for 5-7 mins.
  • Step #5 Fluff with a fork & set aside to cool slightly, uncovered.
  • Step #6 Whisk oil & vinegar together; pour over couscous.
  • Step #7 Add remaining ingredients & toss well.
  • Step #8 Serve either chilled or at about room temp.
