Australian Wattleseed Oatmeal Coconut Cookies Recipe

Ingredients
  • 1 tsp lime zest .
  • 1/2 c sugar .
  • 1/4 tsp salt .
  • 1 tsp lime juice .
  • 3/4 c quick-cooking oats .
  • 1 tbsp wattleseed .
  • 3/4 c unsweetened dried shredded coconut .
  • 1/2 c unsalted butter .
  • 1 c all-purpose flour .
  • 1 large egg, lightly beaten .
  • 1/2 tsp baking soda .
  • 1/4 tsp cream of tartar

Directions
  • Step #1 Position rack in the middle of oven & preheat your trusty oven to 375°F In a mediium bowl, cream of tartar, sift together the flour, baking soda & salt, & set aside.
  • Step #2 In a large bowl, cream together the butter & sugar until smooth.
  • Step #3 Add the wattleseed & stir this to mix.
  • Step #4 Add the egg, lime zest & lime juice, & stir this to mix.
  • Step #5 Fold in the flour mixture until just incorporated.
  • Step #6 Add the oats & coconut, & stir until well mixd.
  • Step #7 Drop cookies, on an ungreased cookie sheet 2 inches apart & bake this until the edges are golden, 1-1/2 to 2 tbsps each, 8 to 10 mins.
  • Step #8 Transfer to a wire rack & cool completely.
