1 1/2 c seasoned dry bread crumbs or plain breadcrumbs .
2 tsps olive oil .
1 3/4 c cooked small elbow macaroni or regular size macaroni .
5 tsps flour .
Garnish .
6-10 c shortening or peanut oil or corn oil .
1 c milk .
Mac & Cheese .
1 egg, lightly beaten .
1 c sharp cheddar cheese .
1 tsp fresh parsley, minced .
3/4 tsp salt .
1 c flour
Directions
Step #1 Place flour in a small sauce pan over medium low heat.
Step #2 Whisk in milk till smooth, then add cheeses, olive oil & salt, stirring until cheese starts to melt.
Step #3 Reduce heat to low, simmer 30 mins.
Step #4 Using whisk, stir sauce every few mins to make sure the sauce becomes thick & smooth.
Step #5 Now place the 3/4 c uncooked macaroni in a pot of boiling water.
Step #6 Boil for 10 mins(8 mins for small macaroni), or till tender.
Step #7 Drain.
Step #8 You should have about 1 3/4 c cooked macaroni.
Step #9 When sauce is done cooking, reserve 2 tbls.
Step #10 of the sauce for later.
Step #11 Pour pasta into a medium bowl & pour in remaining cheese sauce.
Step #12 Pour the mixture into an 8"x8" pan that has been greased with oil.
Step #13 Cover up & chill in fridge.
Step #14 When the macaroni & cheese is cold, slice into 16 squares(slicing down middle, then slicing those squares in half).
Step #15 Put each square on a piece of wax paper, place this in covered container, & freeze 2 hrs.
Step #16 When the mac & cheese has frozen solid, mix milk & egg in a bowl.
Step #17 In another bowl place flour.
Step #18 In a third bowl, mix breadcrumbs & 3/4 tsps salt.
Step #19 Heat the oil to 350*F.
Step #20 Bread the mac & cheese one piece at a time,coating a piece with flour, then placing it in the egg & milk mixure, then coating it with breadcrumbs.
Step #21 Place each piece back into the egg & milk, then in the breadcrumbs again.
Step #22 Repeat this process with all of the pieces, then place on a large plate.
Step #23 Let them sit about 15 mins to defrost.
Step #24 Fry 4 to 6 at a time in hot oil for 3 mins or until golden brown(test the first one to make sure it is hot all the way through.
Step #25 If it is cold inside, let the squares defrost a few more mins).
Step #26 Drain on paper towels a few mins, then place on a serving platter.
Step #27 Heat the remaining 2 tbs.
Step #28 of cheese sauce for about 15 seconds(or until hot) in the microwave.
Step #29 Drizzle the hot sauce over the mac & cheese squares.
Step #30 Sprinkle top parsley over the top & serve.
