1937 Strawberry Shortcake Recipe

Ingredients
  • 5 tbsps shortening .
  • 4 tsps baking powder .
  • 1 pint fresh strawberries .
  • 1/2 tsp salt .
  • whipped cream .
  • Filling .
  • 1 egg, well beaten .
  • 1/4 c butter, melted .
  • 2/3 c milk .
  • Shortcake .
  • 2 c flour .
  • 1/3 c sugar

Directions
  • Step #1 Preheat oven to 425°F.
  • Step #2 Thinly slice strawberries, toss with sugar, & slightly crush.
  • Step #3 Set aside.
  • Step #4 Sift together flour, salt, & baking powder; cut in shortening until mixture resembles coarse crumbs.
  • Step #5 Stir in milk & egg.
  • Step #6 Mix lightly.
  • Step #7 Grease 11x8-inch baking pan.
  • Step #8 Divide dough in half; roll each piece out to fit baking pan.
  • Step #9 Place 1st portion of rolled out dough in greased pan; brush with melted butter.
  • Step #10 Place the remaining portion of rolled out dough onto the first one & brush with more melted butter.
  • Step #11 Bake until browned, about 25 min Let cool then cut into 8 serving pieces.
  • Step #12 For each shortcake, split cake portion & spread sweetened, slightly crushed strawberries between & on top of split cake.
  • Step #13 Serve with whipped cream.
