Shrimp With Sweet Corn Sauce Recipe

Ingredients
  • 1 onion, sliced .
  • 1/2 tsp cinnamon .
  • 2 tbsps butter .
  • 1/2 jalapeno, sliced (or other hot pepper) .
  • 2 tbsps tomato paste .
  • 6-10 oz corn (frozen or canned, I used more than the 6 oz called for in the original recipe) .
  • 1/2 tsp dried thyme .
  • 1-2 lb shrimp, peeled & deveined (depending on how "saucy" you want the end result to be) .
  • garam masala, for dusting (or any spice combination you prefer) .
  • 1 1/4 c coconut milk .
  • 2 garlic cloves, crushed .
  • 1 lemon, juice of .
  • 1 tbsp sliced fresh cilantro (I used dried)

Directions
  • Step #1 Sprinkle top the shrimp with garam masala (or spices of choice) & lemon juice & let marinate in the refrigerator for about an hr.
  • Step #2 Melt the butter in a pan & fry onion & garlic for about 5 mins, till slightly softened.
  • Step #3 Add the shrimp & cook for a few mins, stirring every once in awhile till cooked through & pink.
  • Step #4 Transfer the shrimp, onions & garlic to a bowl, leaving some of the buttery liquid in the pan.
  • Step #5 Add the tomato paste & cook over low heat/flame, stirring.
  • Step #6 Add the thyme, cinnamon & cilantro & jalapeno to the pan & stir well.
  • Step #7 (Keep warm over low heat/flame).
  • Step #8 Blend the corn (reserving about 1 T) in a mixer or food processor/blender with the cocount milk.
  • Step #9 Add to the pan & simmmer till reduced.
  • Step #10 Add the shrimp & reserved corn & let simmer for about 5 mins.
  • Step #11 Spice up to taste with salt & pepper.
