Linda's Egg Salad Sandwiches Or Finger Rolls Recipe

Ingredients
  • salt & pepper, to taste .
  • 1/2 small onion, finely sliced .
  • 15 green olives, finely sliced .
  • 12 hard-boiled eggs, finely mashed .
  • 1 (6 oz) can shrimp, drained, & shredded between your fingers (optional) .
  • 2 tbsps mustard .
  • 2-3 dozen finger rolls .
  • 1 c mayonnaise

Directions
  • Step #1 Put eggs in water, & make sure water is covering eggs.
  • Step #2 Add 1 tsps of salt to water.
  • Step #3 Cover up, & bring to a boil.
  • Step #4 When water starts to boil, take off burner, & let sit for 15 mins Drain water.
  • Step #5 Tap the eggs on the counter when you are ready to peel, & under cold running water, to break the shell, peel the egg.
  • Step #6 This helps the shell to come off easier.
  • Step #7 Mash eggs & whites, using a fork.
  • Step #8 Make sure there are no lg.
  • Step #9 pieces of egg white.
  • Step #10 Mash them good.
  • Step #11 Chill in the fridge.
  • Step #12 Meanwhile, add the mayonnaise & mustard together, & mix well.
  • Step #13 Add to the eggs, along with the onion & olives.
  • Step #14 If using shrimp, add at this time as well.
  • Step #15 Salt & pepper, to taste.
  • Step #16 Mix all well, & chill in the fridge.
  • Step #17 (Be careful with the salt, as the olives & shrimp are salty).
  • Step #18 To Make Sandwiches:.
  • Step #19 Stuff with as much filling as you like, & top this with a lettuce leaf.
  • Step #20 Cut sandwich, & serve.
  • Step #21 To Make Finger Rolls:.
  • Step #22 Stuff with as much filling as you like.
  • Step #23 Sprinkle top with paprika, & top this with a couple of olive slices on each one, if you really like olives.
