Curried Vegetables Recipe

Ingredients
  • 1/2 tsp mustard seeds .
  • 1/2 tsp coriander, ground .
  • 1 lb frozen mixed vegetables .
  • black pepper .
  • 1/8 tsp cinnamon, ground .
  • 1/4 tsp sugar .
  • 2/3 c plain yogurt .
  • 1 tsp ground turmeric .
  • 1 tsp cumin seeds .
  • 1/2 tsp onion powder .
  • 2 medium garlic cloves, crushed .
  • 1/2 tsp fennel seeds .
  • 3 dried red chilies .
  • 1 tsp cornstarch .
  • 2 tbsps vegetable oil .
  • 1/2 tsp salt

Directions
  • Step #1 Poke a few holes into the bag of veggies & microwave on high for 3 mins to thaw.
  • Step #2 Mix together the yogurt & cornstarch, set aside.
  • Step #3 Heat oil in a frying pan over med.
  • Step #4 high heat.
  • Step #5 Add cumin seeds, fennel seeds & mustard seeds & cover pan with splatter screen.
  • Step #6 Stir occassionally until they begin to pop.
  • Step #7 (This is why you need the screen!) Now turn the heat down to Medium & add turmeric, cinnamon, garlic, coriander, onion powder, & chiles.
  • Step #8 Sautee until the garlic turns golden brown.
  • Step #9 Slowly add in vegetables, sugar, salt & pepper & cook till veggies are heated thorougly.
  • Step #10 About 5 mins or so.
  • Step #11 Remove veggies from heat & pour this into bowl with yogurt mix.
  • Step #12 Stir to coat.
  • Step #13 Remove the chilles if you don't want the heat.
