2 (8 oz) cans crushed pineapple (drained but reserve the juice) .
1 green bell pepper, seeded & finely sliced .
1 c white vinegar .
3 c sugar
Directions
Step #1 In a saucepan mix the sugar with tomatoes with juice, soy sauce, green bell pepper, ginger & crushed pineapple (do not add in the pineapple juice) bring to a boil, vinegar, onions, reduce heat to low & let simmer for about 20-25 mins.
Step #2 In a bowl whisk together the reserved pineapple juice with 2 tbsps cornstarch until smooth; add to the tomato mixture, bring to a boil & let simmer stirring for 2 mins.
Step #3 Remove from heat & cool.
