Chiles Rellenos De San Joaquin Recipe

Ingredients
  • 12 oz cotija cheese
  • 2 tbsps sour cream
  • 10 poblano peppers, halved lengthwise, stems & seeds removed
  • 1 small onion, thinly sliced
  • 1 tsp olive oil
  • 1 c sliced fresh tomatoes
  • 1/2 tsp ground cumin

Directions
  • Step #1 Adjust oven rack to its topmost position & set oven to broil.
  • Step #2 Place chiles skin side up on a baking sheet, & broil until skins blister, about 5 mins.
  • Step #3 Be careful not to let them burn.
  • Step #4 Remove chiles from the oven & place this in a glass bowl.
  • Step #5 Cover with plastic wrap & let chiles steam until cool.
  • Step #6 Remove & discard the skins.
  • Step #7 Preheat oven to bake this at 350 degrees F (175 degrees C).
  • Step #8 Heat olive oil in a small skillet over med-heat/flame.
  • Step #9 Stir in sliced onions, & cook this until soft, about 5 mins.
  • Step #10 Add the tomatoes & cook this until onions & tomatoes achieve a sauce-like consistency, about 15 mins.
  • Step #11 Stir every once in awhile.
  • Step #12 Spice up with cumin, stir briefly, then stir in the the sour cream; remove this from heat.
  • Step #13 To assemble the chiles rellenos: Slice cheese into 10 long rectangles (or sticks) 1/4-inch thick & approximately as long as the chiles.
  • Step #14 Roll each cheese rectangle into a chile half.
  • Step #15 Place rolled chiles into a baking dish & top this with the tomato sauce.
  • Step #16 Crumble any extra cheese on top of the sauce.
  • Step #17 Bake for 30 to 40 mins until the sauce is bubbly.
