Hoppin' John Recipe

Ingredients
  • 1 c long-grain white rice .
  • fresh ground pepper, to taste .
  • 1 tbsp butter .
  • 1/2 tsp dried thyme .
  • 1/8 tsp ground allspice .
  • 1/2 tsp dried chipotle powder or regular chili powder .
  • 4 c frozen black-eyed peas or reconstituted black-eyed peas .
  • 1 tsp salt .
  • 2 bay leaves .
  • 1 large yellow onion, finely sliced .
  • 2 tbsps peanut oil

Directions
  • Step #1 Melt butter with oil in large, heavy saucepan over med-heat/flame.
  • Step #2 Add onion, bay leaves, thyme, chili powder & allspice.
  • Step #3 Cook, stirring often, until onion is lightly browned, about 7 mins.
  • Step #4 Prepare rice by your preferred method.
  • Step #5 Add black-eyed peas to the onion mix; cover with water.
  • Step #6 Increase heat to medium-high; heat to a boil.
  • Step #7 Lower heat to a simmer; cover.
  • Step #8 Cook until peas are just tender, 20-25 mins, checking pan & adding more water if needed.
  • Step #9 Uncover; cook over med-heat/flame until water is mostly absorbed, about 5 mins.
  • Step #10 Spice up with salt & pepper, to taste.
  • Step #11 Remove bay leaves.
  • Step #12 Serve over rice.
  • Step #13 Note: I used vegetable broth instead of water.
