Napa Salad (chinese Cabbage) -- No Ramen Noodles Recipe

Ingredients
  • 1 pinch celery seeds .
  • 1/2 tsp salt (to taste) .
  • 1/2 c canola oil or other light-flavored oil .
  • 2 stalks bok choy .
  • 1/2 tsp prepared brown mustard .
  • Dressing .
  • 1/4 c balsamic vinegar .
  • 2 (1 g) packets Splenda sugar substitute .
  • 2 apples, sliced (I recommend a crisp, sweet-tart variety such as Fuji or Gala) .
  • 1/2 c pecans, coarsely broken .
  • 1/2 head napa cabbage .
  • 1/4 tsp fresh ginger, very finely minced .
  • 1 stalk celery, thinly sliced

Directions
  • Step #1 Wash all produce as necessary.
  • Step #2 Divide your half-head of napa lengthwise into 3 or 4 sections & knife-shred crosswise to yield strips about 1.
  • Step #3 5 inches long by 1/4 inch wide.
  • Step #4 Divide your bok choy stalks lengthwise into 1in sections if necessary & slice thinly.
  • Step #5 Knife shred the green leaves to match the napa.
  • Step #6 Mix dressing ingredients & let rest for 5 mins to mix the flavors.
  • Step #7 Toss together all salad ingredients with the dressing.
  • Step #8 Garnish with pecan halves & thin rings of apple if desired.
  • Step #9 Note -- Other artificial sweeteners, honey, sugar, etc.
  • Step #10 may be substituted for the Splenda if you prefer.
  • Step #11 Note -- Can add chunks of cooked ham or other cooked meat to make into a main-dish salad.
