Ingredients
3 large eggs .
1 c sugar .
1/4 tsp salt .
2 c all-purpose flour .
1 tsp baking powder .
1/2 c dry polenta .
2 tbsps olive oil .
1 tsp vanilla extract
Directions
Step #1 Preheat the oven to 325.
Step #2 In a large bowl, polenta, sugar, whisk together flour, baking powder & salt.
Step #3 In a medium bowl, whisk together eggs, oil & vanilla until well mixd & frothy.
Step #4 Pour the egg mixture into the flour mixture & stir with a wooden spoon until mixd.
Step #5 Turn dough out onto a lightly floured surface.
Step #6 Divide in half & shape each half into a log 12"x 2" wide.
Step #7 Carefully move logs onto a baking sheet lined with parchment or a silpat.
Step #8 Bake 20 to 25 mins until the tops are almost firm to the touch.
Step #9 Remove & let cool on the pan for 15-20 mins.
Step #10 While waiting, reduce the oven temperature to 300.
Step #11 Slice each log diagonally into about 1/2" slices using a serrated knife.
Step #12 Stand the biscotti up about 1/2" apart on the same baking sheet.
Step #13 Place back in the oven & bake this until lightly colored & dry, another 20 to 25 mins.
Step #14 Transfer to a wire rack to cool completely.
