Orange-choc Cupcakes W/ Nutella Ganache Filling And Hazelnut Recipe

Ingredients
  • 1/2 lb unsalted butter, at about room temp .
  • 2 c good semisweet chocolate chunks .
  • 8 oz nutella .
  • 1/2 c shortening .
  • 1/2 c heavy cream .
  • 1 tsp kosher salt .
  • For the Nutella Ganache .
  • 3/4 c buttermilk, at about room temp .
  • For the Hazlenut Buttercream Frosting .
  • 2 tbsps all-purpose flour .
  • 1 tsp pure vanilla extract .
  • 1/2 tsp baking powder .
  • 1/4 c grated orange zest (from 4 large oranges) .
  • 4 extra-large eggs, at about room temp .
  • 2 c sugar .
  • 1/2 tsp baking soda .
  • 1/4 c freshly squeezed orange juice .
  • 6 tbsps Frangelico .
  • 5 c confectioners' sugar .
  • 3 c all-purpose flour, plus .
  • 1/2 c butter

Directions
  • Step #1 For the ccake:.
  • Step #2 Preheat the oven to 350°F.
  • Step #3 Cream the butter & sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 mins, or until light & fluffy.
  • Step #4 Add the eggs, one at a time, then the orange zest.
  • Step #5 Sift together 3 c flour, the baking powder, baking soda, & salt In a large-ish bowl.
  • Step #6 In another bowl, mix the orange juice, buttermilk, & vanilla.
  • Step #7 Add the flour & buttermilk mixtures alternately in thirds to the creamed butter, beginning & ending with the flour.
  • Step #8 Melt the chocolate & add into the orange batter.
  • Step #9 Pour 2/3 full into the ccake wrappers, & bake for 22 to 25 mins, smooth the top, until a cake tester comes out clean.
  • Step #10 For the Hazlenut Buttercream Frosting:.
  • Step #11 Cream butter & shortening with mixer for 3 mins on high speed.
  • Step #12 Add Frangelico.
  • Step #13 Gradually add sugar, one c at a time, beating well on medium speed.
  • Step #14 Scrape sides & bottom of bowl often.
  • Step #15 Mix on high speed for 5 mins.
  • Step #16 For the Nutella Ganache:.
  • Step #17 Melt the Nutella & heavy cream in the top of a double boiler over simmering water until smooth & warm, stirring every once in awhile.
  • Step #18 After the ccakes have had a chance to cool, scoop out the tops of the ccakes with a mellon baller & cut off the “cone” part of the middle.
  • Step #19 Drizzle in the Nutella ganache & replace the top of the ccake.
  • Step #20 Spread with the hazelnut frosting.
  • Step #21 You can decorate them with leftover orange rind, but that’s optional.
