Yankee Cheater Pulled Pork Recipe

Ingredients
  • 1 (14 oz) can tomato sauce .
  • 3/4 c honey .
  • 1 (4 oz) can chipotle chiles in adobo .
  • 3/4 c brown sugar .
  • 1 (12 oz) bottle beer .
  • 4-5 lbs boston butt pork shoulder .
  • 1/4 c balsamic vinegar .
  • 1 tbsp seasoning salt

Directions
  • Step #1 Puree chipotle peppers with adobo sauce until smooth.
  • Step #2 Place pork shoulder In a large-ish crock pot.
  • Step #3 Open beer & drink half.
  • Step #4 Combine other half with tomato sauce & pureed peppers.
  • Step #5 pour over pork.
  • Step #6 Set slow cooker (aka crockpot) to low & let it cook for at least 12 hrs.
  • Step #7 Once pork is falling apart, remove this from liquid, wrap with foil wrap & set aside.
  • Step #8 Remove fat layer from liquid with a gravy separator or a turkey baster.
  • Step #9 in a medium saucepan, simmer liquid on a med-low heat to reduce by a third.
  • Step #10 once liquid has reduced, add in the remaining ingredients & let simmer until it thickens a little bit.
  • Step #11 Adjust seasoning to taste.
  • Step #12 Pull apart pork with 2 forks or your hands, be sure to remove any excess fat & bones if any.
  • Step #13 I put meat back into my crock pot on the warm & then add the sauce & stir it all up.
  • Step #14 Serve on a warm roll or bun with some cole slaw.
