Barbecued Raspberry-hoisin Chicken
Ingredients
1 egg .
1 tsp sesame seeds, toasted .
Filling .
Buns .
1 tsp salt .
12 oz boneless skinless chicken thighs .
2 tbsps melted butter .
1/4 c sugar .
cooking spray .
1 1/2 tbsps hoisin sauce .
1 tsp water .
3 1/2 c bread flour .
1 large egg, lightly beaten .
2 tsps rice vinegar .
3 tsps yeast .
1/4 c green onions, finely sliced .
1 c water .
1 tbsp oyster sauce
Directions
Step #1 Add yeast to water.
Step #2 Stir in 1/4 c of sugar.
Step #3 Allow to sit for 10 mins until foamy.
Step #4 Beat egg with 2 tbsp of butter & add to yeast mixture.
Step #5 With mixer on low, add salt & slowly add in 31/2 c of flour, one c at a time.
Step #6 Knead in mixer on low for 10 mins or until dough is pliable.
Step #7 Remove & shape as rolls, placing them on a pan lined with wax or parchment paper.
Step #8 Allow to rise for 30 mins.
Step #9 While dough rises, heat a skillet over medium-high heat.
Step #10 Coat pan with cooking spray.
Step #11 Add chicken; cook 4 mins on each side or until done.
Step #12 Cool slightly; shred meat with 2 forks.
Step #13 Place chicken in a medium bowl.
Step #14 Add green onions, oyster sauce, hoisin sauce, & vinegar; toss well to mix.
Step #15 Roll each dough piece into a 4-inch circle on a lightly floured surface.
Step #16 Spoon about 2 tbsps chicken mixture into center of each dough circle.
Step #17 Gather edges of dough over filling; pinch to seal.
Step #18 Place the filled dough, seam sides down, on a baking sheet coated with cooking spray.
Step #19 Lightly coat filled dough with cooking spray.
Step #20 Cover up & let rise 20 mins.
Step #21 Beat together egg & water, set aside.
Step #22 Preheat oven to 375°.
Step #23 Uncover filled dough.
Step #24 Gently brush with egg wash.
Step #25 Sprinkle top evenly with sesame seeds.
Step #26 Bake at 375° for 15 mins or until golden brown.
Step #27 Serve warm.
