Pineapple Rhubarb Pie Recipe

Ingredients
  • 1/2 tsp grated lemon peel .
  • 3 tbsps quick-cooking tapioca .
  • 1 1/2 c sugar .
  • 2 (8 oz) cans crushed pineapple, drained .
  • 1 tbsp lemon juice .
  • 1 (15 oz) package put in the fridged pie pastry (or make your own) .
  • 3 c sliced rhubarb (fresh or frozen)

Directions
  • Step #1 In bowl, mix the rhubarb, tapioca, pineapple, sugar, lemon juice & lemon peel.
  • Step #2 Let stand for 15 mins.
  • Step #3 Line a 9-inch pie plate with bottom pastry.
  • Step #4 Add the filling.
  • Step #5 Roll out remaining pastry to fit top of pie; cut slits or make decorative cutouts in pastry.
  • Step #6 Place over filling; trim, seal & flute edges.
  • Step #7 Bake at 350 degrees for 45-50 mins or until crust is golden brown & filling is bubbly.
  • Step #8 Cool.
  • Step #9 Refrigerate leftovers.
