Easter Babka With Icing Recipe

Ingredients
  • 1/2 c light cream or half-and-half .
  • 1/2 tsp almond extract .
  • 1 tsp lemon rind, grated .
  • 1 tbsp butter, melted .
  • 2 c flour .
  • Icing .
  • 1/4 c raisins .
  • 1 tbsp rum or lemon juice .
  • Dough .
  • 1 (1/16 oz) envelope dry yeast .
  • 1/3 c sugar .
  • 1 tsp vanilla .
  • 3 eggs .
  • 1/2 c confectioners' sugar

Directions
  • Step #1 Dissolve yeast in cream.
  • Step #2 Combine with half the sugar & flour & let double in size.
  • Step #3 Add all the remaining ingredients except the raisins & knead until smooth.
  • Step #4 Add raisins, while continuing to knead.
  • Step #5 Grease & flour babka pan (or tube pan).
  • Step #6 Place dough in pan, & leave in a very warm, cover with a clean cloth, draft-free place until doubled in size.
  • Step #7 Bake at 350° for 35 to 40 mins.
  • Step #8 When cool, remove this from pan.
  • Step #9 Mix icing ingredients well & drizzle over babka.
