Bananas Con Mousse De Duraznos - Bananas With Peach Mousse Recipe

Ingredients
  • 1/2 c nuts, finely sliced (such as walnuts, Brazil nuts, hazelnuts, or pecans) .
  • 3 tbsps sugar .
  • 1/2 c whipping cream (heavy cream) .
  • 1/4 c Curacao .
  • peaches, sliced, tossed with fresh lemon juice (garnish) .
  • nuts, sliced (garnish) .
  • 4 bananas (ripe but firm) .
  • 1-2 peach, ripe, peeled & pitted (sliced 1/4 inch thick to equal 1 c sliced fruit) .
  • 2 tbsps fresh lemon juice .
  • 2 large egg whites

Directions
  • Step #1 Peel the bananas & slice into 1/4-inch-thick rounds.
  • Step #2 In a medium-size mixing bowl, toss the bananas with the lemon juice & curaçao.
  • Step #3 Transfer to a 6-c glass dish.
  • Step #4 Top evenly with the nuts.
  • Step #5 In a medium bowl with an electric mixer, whip heavy cream until stiff peaks form.
  • Step #6 Place the 1 c peaches in a mixer or a food processor/blender & process until smooth.
  • Step #7 Gently fold peach puree into the whipped cream.
  • Step #8 In a medium-size mixing bowl with an electric mixer, whip the egg whites until soft peaks form.
  • Step #9 Beat in the sugar 1 tbsp at a time.
  • Step #10 Fold the peach mixture into the egg whites.
  • Step #11 Spread on top of the nuts & bananas.
  • Step #12 Cover up with plastic wrap & put in the fridge until needed.
  • Step #13 This is best if made only a couple of hrs ahead.
  • Step #14 To serve, divide the mixture between 6 stemmed glasses or dessert dishes.
  • Step #15 Spoon some of the liquid that collects on the bottom of the glass dish on top of each dessert.
  • Step #16 Garnish with sliced peaches or sliced nuts.
