Mashed Potatoes With Zucchini Ragout Recipe

Ingredients
  • 1 (14 1/2 oz) can sliced tomatoes, undrained .
  • Ragout .
  • 4 c torn spinach .
  • 6 tbsps grated fresh parmesan cheese .
  • Potatoes .
  • 1/2 tsp salt .
  • 1/4 tsp fresh ground black pepper .
  • 2 c water .
  • 1/4 c sliced fresh basil .
  • 2 tsps extra-virgin olive oil .
  • 1/4 c 2% low-fat milk .
  • 1/2 c minced green onions .
  • 1 tsp dried oregano .
  • 1/2 tsp salt .
  • 1/4 tsp fresh ground black pepper .
  • 2 tsps black olive paste .
  • 3 c cubed zucchini .
  • 1 lb cremini mushrooms, quartered .
  • 2 garlic cloves, minced .
  • 2 tbsps extra-virgin olive oil .
  • 1 1/2 c thinly sliced onions .
  • 2 lbs cubed yukon gold potatoes

Directions
  • Step #1 To make the potatoes: place potatoes in a big pan; cover with water; bring to a boil.
  • Step #2 Decrease heat; simmer 15 mins or until tender; drain.
  • Step #3 Return potatoes to pan; add 2 tbsps oil, ½ tsp salt, & ¼ tsp pepper.
  • Step #4 Mash potato mixture with a potato masher to desired consistency; cover & keep warm.
  • Step #5 Heat milk over med-heat/flame In a large-ish nonstick skillet to 180° or until tiny bubbles form around edge (do not boil); stir in the spinach, cook 1 min or until spinach melts.
  • Step #6 Add milk mixture & green onions to potato mixture, stirring to mix.
  • Step #7 To make ragout: wipe skillet with paper towels; heat 2 tbsps oil in skillet over med-heat/flame.
  • Step #8 Add in sliced onion, oregano, & garlic; cook 5 mins or until lightly browned, stirring often.
  • Step #9 Add in mushrooms; cook 7 mins or until mushrooms are tender, stirring often.
  • Step #10 Add in zucchini; cook 2 mins, stirring often.
  • Step #11 Stir in water & the next 5 ingredients; simmer, 15 mins, uncovered, stirring every once in awhile.
  • Step #12 Serve ragout over potatoes; sprinkle with cheese.
