Shirley's Fried Scallops Recipe

Ingredients
  • 1 c unflavored breadcrumbs, to coat scallops .
  • 1 lb sea scallops (If large, cut in half or quarters) .
  • 1/2 tsp salt .
  • vegetable oil, for deep frying .
  • 2 eggs

Directions
  • Step #1 Wash scallops in cold water, & drain on paper towel.
  • Step #2 Beat eggs.
  • Step #3 Add salt to crumbs.
  • Step #4 Roll scallops in crumbs, then dip in egg.
  • Step #5 Roll in crumbs again.
  • Step #6 Deep fry 2-3 mins or until golden brown.
  • Step #7 Scallops are done when they are white in the middle.
  • Step #8 Drain on absorbent paper towels.
  • Step #9 Serve with lemon & ketchup, tarter sauce, or cocktail sauce.
