Icelandic Pancakes With Whipped Cream (crepes) (ponnukikur Med Recipe

Ingredients
  • 1 1/4-1 1/2 c milk .
  • 1 1/2 c all-purpose flour .
  • 1/4 tsp baking powder .
  • 1/4 tsp baking soda .
  • 2 tbsps butter, melted .
  • TOPPING .
  • 1 c whipping cream, whipped .
  • 2 tbsps powdered sugar .
  • 2 eggs, separated .
  • preserves or jam or jelly .
  • 1 tsp vanilla

Directions
  • Step #1 In a bowl, egg yolks, butter, mix together the milk, & vanilla.
  • Step #2 Combine the flour, baking soda, & baking powder & mix into the liquids until mixed.
  • Step #3 Beat the egg whites & fold into the mixture.
  • Step #4 Heat a heavy skillet until a drop of water boz off the surface.
  • Step #5 Butter the skillet.
  • Step #6 Bake thin pancakes using 1/4 c batter per cake until browned on both sides.
  • Step #7 Spread with preserves, jam, or jelly, & whipped cream sweetened with powdered sugar.
  • Step #8 Fold into triangles & serve as soon as possible.
  • Step #9 Makes 10 to 12 pancakes.
