Lentil Soup With Beef Recipe

Ingredients
  • 1 large onion, sliced .
  • 1 (28 oz) can sliced tomatoes with juice .
  • 2 large carrots, peeled & sliced .
  • 6 garlic cloves, sliced .
  • 1 1/2 lbs boneless beef chuck, cut into 1-inch cubes .
  • 1 1/2 tsps sliced fresh rosemary leaves .
  • 2 c lentils, rinsed (about 11 oz) .
  • 2 tbsps olive oil .
  • salt & freshly ground black pepper .
  • 1/3 c sliced fresh Italian parsley .
  • 1 1/2 tsps dried oregano .
  • 6 (14 oz) cans beef broth .
  • 3 large celery ribs, sliced

Directions
  • Step #1 Heat the oil in heavy large pot over medium-high heat.
  • Step #2 Sprinkle top the beef with salt & pepper.
  • Step #3 Add half of the beef & cook this until brown, about 8 mins.
  • Step #4 Using a slotted spoon, transfer the beef to a bowl.
  • Step #5 Repeat with the remaining beef.
  • Step #6 Add the celery, rosemary, onion, garlic, carrots, & oregano to the pot.
  • Step #7 Saute until the onions are translucent, about 8 mins.
  • Step #8 Return the beef & any accumulated juices from the bowl to the pot.
  • Step #9 Add the broth & tomatoes with their juice.
  • Step #10 Bring the soup to a boil.
  • Step #11 Reduce the heat to medium-low.
  • Step #12 Cover up & let simmer until the meat is just tender, stirring every once in awhile, about 1 hr.
  • Step #13 Add the lentils.
  • Step #14 Cover up & continue simmering until the lentils are tender, about 40 mins.
  • Step #15 Stir in the parsley.
  • Step #16 Spice up the soup, to taste, with salt & pepper.
  • Step #17 Ladle the soup into bowls & serve.
