Smoked Salmon Salad (nicoise-style) Recipe

Ingredients
  • 1 head butter lettuce (torn into bite-size pieces) .
  • 1/2 c black olives .
  • 8 oz smoked salmon (very thinly sliced) .
  • 1 small red onion (sliced & separated into rings) .
  • 1 pint cherry tomatoes (halved) .
  • 1 (10-12 oz) bag romaine lettuce (torn into bite-size pieces) .
  • 1 (10 oz) package frozen green beans (cooked, drained & chilled) .
  • 3 small red potatoes (cooked, chilled & quartered) .
  • 2 tbsps capers .
  • 3 eggs (hard-boiled, peeled & cut into wedges) .
  • 3/4 c vinaigrette dressing (bottled red wine) .
  • 1 small green bell pepper (cut into rings)

Directions
  • Step #1 Cook beans, hard-boil eggs & potatoes.
  • Step #2 Set aside & allow to completely cool.
  • Step #3 While they are cooling, prepare & slice onion & bell pepper.
  • Step #4 Line a lrg platter w/lettuce & mound smoked salmon in the centre.
  • Step #5 Arrange beans, egg wedges, tomatoes, pepper rings, onion rings, potatoes & olives over the lettuce & around the salmon.
  • Step #6 Cover up platter & chill at least 2 hrs Just B4 serving, drizzle w/salad dressing & sprinkle w/capers.
  • Step #7 HINT: To easily slice smoked salmon, put it in the freezer.
  • Step #8 When nearly frozen, remove this from the freezer & use your sharpest knife to shave very thin slices.
