Oven Fried Chicken Recipe

Ingredients
  • 20 whole-grain salted crackers, pulsed in a food processor/blender until fine (about 1/2 c) .
  • 1 c low-fat plain yogurt .
  • 2 tbsps sesame seeds .
  • 1/2 tsp salt .
  • 1/2 tsp garlic powder .
  • olive oil flavored cooking spray .
  • 3/4 tsp cayenne pepper .
  • 2 egg whites .
  • 1 tbsp Dijon mustard .
  • 4 medium sized skinless chicken breasts & 4 skinless chicken thighs, rinsed & patted dry (about 3 1/2 lbs chicken) .
  • 2 1/2 c corn cereal flakes, pulsed in a food processor/blender to fine crumbs (about 1/2 c)

Directions
  • Step #1 Preheat oven to 375 degrees F.
  • Step #2 Lightly spray a baking sheet with olive oil.
  • Step #3 Combine the crackers & corn cereal crumbs, cayenne, sesame seeds, & garlic powder in a shallow bowl & reserve.
  • Step #4 In a large bowl, yogurt, mix egg whites, Dijon mustard, & salt.
  • Step #5 Add the chicken pieces & coat thoroughly with the yogurt mixture.
  • Step #6 One at a time, dip the chicken pieces in the cracker mixture, packing crumbs onto chicken.
  • Step #7 Arrange the chicken on a baking sheet & spray lightly with olive oil cooking spray.
  • Step #8 Bake for 35 to 45 mins, or until juices run clear when chicken is pierced with a knife.
