3 tbsps cider vinegar (white will do in a pinch) .
1/2-1 lb thick-cut bacon (or less) .
1/4 c cold water .
2 tbsps bacon fat (reserved) .
1 c boiling water .
1/2 tsp salt .
1 tbsp soy sauce
Directions
Step #1 In a large cast-iron skillet, fry bacon until nearly crisp; reserve at least 2 T.
Step #2 bacon fat in the pan.
Step #3 Meanwhile, prepare beans: cut into 1-inch pieces; place this in skillet with reserved grease, boiling water, & salt.
Step #4 Cover up & heat quickly until beans steam (boil), then turn heat down & cook for 15-20 mins (tender-crisp) DO NOT DRAIN.
Step #5 Mix cornstarch with sugar, vinegar, soy sauce & water; pour over beans; stir & cook this until slightly thickened & clear.
Step #6 Crumble at least 4 slices of bacon into the beans; stir this to mix.
Step #7 Use MORE bacon if this is more of a "main dish"
OPTION: Fry 1 medium sliced onion in the bacon grease; remove this from pan BEFORE cooking the beans; add with the bacon at the end.
