Tropical Baked Kumala Recipe

Ingredients
  • 4 medium kumara (orange or golden) .
  • 340 g corned beef (try a lower fat, lower sodium version(you won't taste the difference!) .
  • 1/4-1/2 c grated cheese .
  • 1 dash oil .
  • 1 tsp minced fresh ginger (optional) .
  • 1/2 c well drained crushed pineapple .
  • 2-3 trimmed & sliced spring onions

Directions
  • Step #1 Wash the kumala & dry well.
  • Step #2 Trim the ends.
  • Step #3 Rub the kumala with oil & place on a baking tray.
  • Step #4 Cook at 200oC for 45-50 mins or until well cooked.
  • Step #5 Alternatively prick the kumara with a fork & microwave on high power for 15 mins or until tender.
  • Step #6 Slice a top off each kumala & scoop the flesh into a bowl.
  • Step #7 Add the pineapple, ginger, spring onions & Corned Beef & mix carefully with a fork to break up the corned beef & mix the ingredients lightly.
  • Step #8 Do not mash.
  • Step #9 Re-fill each kumala with 1/4 of the mixture & return or place on the baking tray.
  • Step #10 Sprinkle top each with a little grated cheese.
  • Step #11 Cook at 200oC for 15 mins until piping hot & golden.
