Thai Style Roasted Veg Recipe

Ingredients
  • 1 lime, juice of or lemon, juice of, only .
  • 2 red onions, quartered .
  • 2 tsps coriander seeds .
  • 2 tsps fresh ginger, finely sliced .
  • 2 tbsps fresh basil, finely sliced .
  • 2 aubergines, sliced into 2 . 5cm/1 inch pieces .
  • 1 garlic clove, finely sliced .
  • 2 tsps lemongrass, finely sliced .
  • 16 cherry tomatoes .
  • 1 tsp cumin seeds .
  • For the Red Curry Paste .
  • For the garnish .
  • 2 fresh red chilies, de-seeded .
  • 1 tbsp shoyu or light soya sauce .
  • 1 tbsp peanut oil .
  • 250 g firm tofu, cubed .
  • 1 lb button mushrooms, left whole .
  • For the roast vegetables

Directions
  • Step #1 Preheat oven 190°C.
  • Step #2 First make the red curry paste:.
  • Step #3 Put all the ingredients into a mixer & mix until they form a smooth, thick paste.
  • Step #4 Set aside.
  • Step #5 Put the vegetables & tofu onto an oven proof tray.
  • Step #6 Mix the shoyu, groundnut oil & lime or lemon juice & pour over the vegetables.
  • Step #7 Toss well to coat.
  • Step #8 Roast the vegetables for 25 mins, then add the curry paste & toss well again to coat.
  • Step #9 Return to the oven for another 5 mins.
  • Step #10 Transfer to a serving platter & garnish with basil.
