Intense Black Bean Soup Recipe

Ingredients
  • 2 medium onions, sliced .
  • 4 (15 oz) cans black beans, drained .
  • 1 tsp crushed red pepper flakes .
  • 7 c water .
  • pepper, to taste .
  • 1 green bell pepper, sliced .
  • salt, to taste .
  • 1 tbsp olive oil .
  • 1 tsp cayenne pepper .
  • 5 garlic cloves, minced

Directions
  • Step #1 mix 7 c of water & black beans & set to boil on medium heat.
  • Step #2 sautee onions, garlic, cayenne, & crushed red pepper in olive oil until onions are soft.
  • Step #3 add onion mixture to the beans & water & stir.
  • Step #4 boil for 15 mins.
  • Step #5 add sliced green bell pepper & lower heat to simmer for 20 mins.
  • Step #6 allow this to cool for 15-20 mins.
  • Step #7 pour half of the mixture into a mixer & puree.
  • Step #8 add to pot & reheat until ready to serve.
  • Step #9 Good with crackers, whole wheat toast, & pitas.
