Roasted Carrots And Onions Recipe

Ingredients
  • salt .
  • 1 tbsp olive oil .
  • 3 red onions .
  • 2 lbs carrots

Directions
  • Step #1 Preheat oven to 425.
  • Step #2 Peel carrots & onions.
  • Step #3 Cut onions in quarters, leaving root ends in tact, so that they hold the quarters together.
  • Step #4 Cut carrots into 2 - 3" pieces, & if the carrots are really fat, cut them lengthwise into halvves or quarters.
  • Step #5 (You can adjust the quanitities of everything -- it's just that the program here wants specifics.
  • Step #6 ).
  • Step #7 Put them onto a cookie sheet or jelly roll pan & drizzle with olive oil & salt & mix them with your hands so that they are lightly coated.
  • Step #8 The pan does really matter here -- if you use something with sides, they steam rather than roast.
  • Step #9 Roast for 15 mins, turn & roast for 15 - 30 mins more.
  • Step #10 At this point, they should be cooked, but they can go longer if they're not done.
  • Step #11 they should be crisp/tender (if they go longer, which I'm starting to like, they get soft, too) & have browned spots on them.
