Coconut Tilapia With Apricot Dipping Sauce Recipe

Ingredients
  • 1/2 c canola oil
  • 1 c flaked coconut, finely sliced
  • Apricot Dipping Sauce
  •  
  • 1 tsp prepared horseradish
  • 2 tbsps flour
  • 1 (4 oz) carton egg substitute
  • 1/2 c apricot jam
  • 1/2 c cornstarch
  • 1 tbsp Creole seasoning
  • 4 (4 oz) fillets tilapia
  • 2 tsps brown mustard

Directions
  • Step #1 Toss together the coconut, flour & Creole seasoning in a bowl.
  • Step #2 In a separate bowl, toss the tilapia with the cornstarch, & shake off the excess.
  • Step #3 Pour the egg substitute into a separate bowl, & dip the fillets in the egg.
  • Step #4 Press fillets in the coconut mixture coating all sides.
  • Step #5 Heat canola oil in a frying pan to a temperature of about 350 degrees F (175 degrees C).
  • Step #6 Fry fillets one or two at a time on both sides until golden brown.
  • Step #7 Remove to drain on a paper towel.
  • Step #8 Prepare the apricot dipping sauce by stirring together the jam, mustard, & horseradish in a small bowl.
  • Step #9 Serve the tilapia accompanied by the dipping sauce.
