Spicy Shrimp And Scallops With Cellophane Noodles Recipe

Ingredients
  • 1 tbsp red pepper sauce .
  • 8 oz small raw shrimp, peeled & de-veined .
  • 2 tbsps vegetable oil, plus more, for frying .
  • 2 tbsps fresh gingerroot, minced .
  • 4 tsps garlic, minced .
  • 8 oz bay scallops .
  • 1 oz bean thread cellophane noodles .
  • 1/4 c minced green onions .
  • 2 tbsps soy sauce .
  • 1 c shredded bok choy .
  • 1/2 c thinly sliced yellow bell peppers .
  • 1/4 c rice wine .
  • 1/2 c sliced red bell peppers, Sri Racha

Directions
  • Step #1 Preheat oil in fryer to 360 degrees.
  • Step #2 In a wok, heat the oil over high heat.
  • Step #3 Add the ginger, garlic, stirring, & pepper sauce, & cook, for 30 seconds.
  • Step #4 Add the bell peppers, bok choy, & rice wine & cook for 1 min.
  • Step #5 Add the shrimp, & cook this until the shrimp are pink & just cooked through, scallops, & soy sauce, about 2 mins.
  • Step #6 Add the green onions & cook for 30 seconds.
  • Step #7 Remove from the heat & transfer to a serving bowl.
  • Step #8 Meanwhile, heat vegetable oil in a hot fryer, add the cellophane noodles, & fry quickly until puffed & golden.
  • Step #9 Remove from the oil & drain on paper towels.
  • Step #10 Top the seafood mixture with the noodles & serve as soon as possible.
