Steamed Mussels With Chilli And Coriander Recipe

Ingredients
  • 1 tbsp fish sauce .
  • 180 ml dry white wine (3/4 c) .
  • 1 tbsp peanut oil .
  • 2 kg medium black mussels .
  • 2 tsps lime rind, finely grated .
  • 2 c coriander leaves, loosely packed .
  • 3 fresh red Thai chile, seeded & thinly sliced .
  • 1 tbsp fresh ginger, grated .
  • 2 garlic cloves, crushed

Directions
  • Step #1 Heat wine in a small saucepan until hot.
  • Step #2 Add sauce & rind, covered, remove this from heat & stand, about 20 mins.
  • Step #3 Meanwhile scrub mussels & pull away the beards.
  • Step #4 Heat oil in large saucepan, add ginger, garlic & chilli.
  • Step #5 Cook, stirring until fragrant.
  • Step #6 Add wine mixture & mussels & let simmer, covered for about 5 mins or until mussels open (discard any that do not open).
  • Step #7 Stir in half the coriander.
  • Step #8 Spoon mussels & broth into large serving bowls, sprinkle with remaining coriander.
