Jolly Holiday Corn Cakes Recipe

Ingredients
  • 1 1/2 tsps baking powder .
  • 1 1/2 c corn kernels, frozen .
  • 3/4 c milk .
  • 1/2 c cornmeal .
  • 1 egg, lightly beaten .
  • 1/4 tsp baking soda .
  • 1/2 c buttermilk .
  • 1 c gluten-free flour .
  • 1/2 tsp salt .
  • 2 tbsps butter

Directions
  • Step #1 Thaw frozen corn.
  • Step #2 Line a 15/10/1 inch pan with foil wrap.
  • Step #3 Spray lightly with cooking spray.
  • Step #4 Spread corn in pan, bake this at 450 degreen for 10 mins.
  • Step #5 Stir once while cooking.
  • Step #6 Combine flour, cornmeal, baking powder salt & baking soda in bowl.
  • Step #7 Combine milks in a 2 c glass measure.
  • Step #8 In large bwoel, cream butter.
  • Step #9 Add egg & beat until well mixed.
  • Step #10 Alternately add flour & milk, beating on low after each addition until well mixed.
  • Step #11 Stir in corn.
  • Step #12 Heat griddle sprayed with cooking spray or 1-2 tbsp olive oil until water dances in skillet.
  • Step #13 For each pancake, put in 2 tbsp batter & spread into a circle.
  • Step #14 Cook over med-heat/flame, turning when pancakes are bubbly on top & edges slightly dry.
  • Step #15 Serve as soon as possible.
  • Step #16 You can also keep warm in a 300F degree oven.
