Vegetarian Matzo Ball Soup Recipe

Ingredients
  • 1 red bell pepper, coarsely sliced .
  • 1 carrot, cut into 1/4 inch slices .
  • 1 stalk celery, coarsely sliced .
  • salt & pepper .
  • 1/4 c coarsely sliced parsley .
  • 2 tbsps vegetable stock (or water) .
  • 6 c vegetable stock .
  • 2 green onions, including green parts, coarsely sliced .
  • 2 tbsps unsalted butter, melted (or vegetable oil) .
  • Soup .
  • Matzo Balls .
  • 1 tbsp minced flat leaf parsley .
  • 1/2 tsp dried dill (or 1 tbsp fresh dill) .
  • 1 bay leaf .
  • 1/2 tsp salt .
  • 1/2 c unsalted matzo meal .
  • 2 eggs, lightly beaten

Directions
  • Step #1 To make the matzo balls, stir this together eggs, butter & vegetable stock in a small bowl.
  • Step #2 Add the matzo meal, parsley, dill & 1/2 tsp salt.
  • Step #3 Stir until evenly mixd.
  • Step #4 Cover up & put in the fridge for at least 15 mins & up to 8 hrs.
  • Step #5 Bring a large pot of water to boil over high heat; add a dash of salt.
  • Step #6 Using wet hands, for the dough into 12 1-inch balls.
  • Step #7 Drop the balls, one at a time, into the boiling water.
  • Step #8 Reduce the heat & let simmer for about 30 mins.
  • Step #9 Matzo balls should be plump, tender & cooked through.
  • Step #10 While the matzo balls are simmering, make the soup.
  • Step #11 Combine all ingredients except green onions, parsley, salt & pepper in large dutch oven.
  • Step #12 Bring to a boil over high heat.
  • Step #13 Reduce the heat & let simmer for 20 mins.
  • Step #14 Stir in remaining ingredients & cook for another 10 mins.
  • Step #15 Remove bay leaf & taste.
  • Step #16 Adjust seasonings to suit taste.
  • Step #17 When matzo balls are done, transfer them to a plate.
  • Step #18 To serve, place two matzo balls in a bowl & ladle soup over them.
