Asian Tofu Salad Recipe

Ingredients
  • 14 oz organic extra firm tofu (nasoya is a good brand) .
  • 1 tsp sesame oil .
  • 1 inch fresh ginger, sliced .
  • salt & pepper, to taste .
  • 1-2 scallion, sliced thin (white & green parts) .
  • 3 tbsps soy sauce .
  • 2 garlic cloves (smashed with back of knife or garlic press) .
  • 1 tsp dried lemongrass (optional but recommended) or 1 tbsp fresh lemongrass (optional but recommended)

Directions
  • Step #1 Whisk all ingredients except for tofu in a 9x9 inch square baking dish.
  • Step #2 Drain & slice tofu in half lengthwise to make two thinner slabs.
  • Step #3 Blot with a paper towel.
  • Step #4 Preheat nonstick skillet over med-heat/flame & spray with non-stick spray.
  • Step #5 Slide tofu slices onto skillet & grill for about 4-5 mins per side, flipping carefully with a large spatula.
  • Step #6 Brown it nicely to give it color & texture.
  • Step #7 Slip tofu slices into marinade, & turn with spatula at least once.
  • Step #8 While the tofu is sitting in the marinade, cut each slab 3 times lengthwise & widthwise with a sharp knife to make 16 squares per slab.
  • Step #9 Toss carefully.
  • Step #10 Let marinate for up to 30 mins & remove garlic & ginger slices before serving warm, at about room temp or chilled.
