Daube Of Beef (french Beef Stew) Recipe

Ingredients
  • 5 shallots, thinly sliced .
  • 2 tbsps butter or margarine .
  • 4 garlic cloves, minced .
  • 3 lbs lean boneless beef chuck roast .
  • 1/4 tsp dried thyme .
  • 2 medium carrots, cut into about 1/4 inch thick slices .
  • 1/4 tsp whole black peppercorns .
  • 1/4 c brandy (optional) .
  • 1 strip orange peel, about 1/2 inch thick & 3 inches long .
  • 3/4 c dry red wine or beef broth .
  • 1/3 c sliced baked ham .
  • 1/2 tsp dried sage .
  • 2 tbsps all-purpose flour .
  • 2 tbsps balsamic vinegar .
  • 1 bay leaf .
  • 1/4 c all-purpose flour .
  • 1/8 tsp ground cloves

Directions
  • Step #1 In a large slow cooker (aka crockpot), ham, carrots, shallots, garlic, orange peel & bay leaf.
  • Step #2 Coat beef strips with 1/4 c flour, add to slow cooker (aka crockpot).
  • Step #3 Sprinkle top with peppercorns, cloves, theyme, & sage.
  • Step #4 Drizzle with viegar; pour in wine & brandy.
  • Step #5 Cover up & cook on low for 8 to 9 hrs.
  • Step #6 Remove & dicard bay leaf & orange peel from stew.
  • Step #7 Blend together the 2 Tablespoons of flour & 2 Tablespoons of butter.
  • Step #8 Place mixture into stew & mix in well.
  • Step #9 Stirring 2 to 3 times.
  • Step #10 Cook for extra 20 mins on high or until sauce is thickened.
