Crispy Skin Salmon Recipe

Ingredients
  • 1 garlic clove, sliced .

  • CHIMICHURI SAUCE .
  • 1/8 c onions, finely minced or 1 shallot .
  • 1/2 tsp dried oregano .
  • 2 tbsps extra virgin olive oil .
  • 1 c brown rice .
  • 10 oz salmon fillets, skin on .
  • SALMON .
  • 1 tsp extra virgin olive oil .
  • EDAMANE .
  • 1 pinch salt .
  • 1 garlic clove, smashed .
  • 1/2 tsp red chili pepper flakes, crushed .
  • 1/4 c extra virgin olive oil .
  • RICE .
  • 3 tbsps distilled vinegar .
  • 1 1/2 tsps ground cumin .
  • 2 c edamame, shelled, blanched, & cooled .
  • 1 lime wedge, juice .
  • 2 c water .
  • 2 tbsps parsley, sliced .
  • salt & pepper .

  • 1 tsp olive oil .
  • 3 tsps fresh cilantro, sliced

Directions
  • Step #1 RICE:.
  • Step #2 Place the rice & oil in a rice cooker.
  • Step #3 Mix well.
  • Step #4 Add in the water, lime juice & garlic clove.
  • Step #5 Cook according to manufacturer’s instructions.
  • Step #6 After cooking, let rice sit for 20 mins & stir in the cilantro.
  • Step #7 EDAMAME:.
  • Step #8 Heat the olive oil to the smoking point in a pan.
  • Step #9 Add in the edamame & let it sit for 1 min.
  • Step #10 Add in the shallots & garlic & cook for 2 mins.
  • Step #11 Spice up with salt & pepper.
  • Step #12 SALMON:.
  • Step #13 Heat the oil to just smoking in a pan.
  • Step #14 Spice up the flesh side of salmon with salt & pepper.
  • Step #15 Place the filet in he pan skin down.
  • Step #16 Let it cook for 5 mins.
  • Step #17 You should see the oil sizzling & the flesh cooking from the bottom up.
  • Step #18 When the flesh looks like it has cooked about half the way up, flip the fish over & cook for 20 seconds.
  • Step #19 Remove.
  • Step #20 CHIMICHURI SAUCE:.
  • Step #21 Combine ingredients together & use as a garnish on meats, poultry & fish.
