Barefoot Contessa's Caramelized Shallots Recipe

Ingredients
  • 1/2 tsp kosher salt .
  • 6 tbsps unsalted butter .
  • 2 lbs fresh shallots, peeled, with roots intact .
  • 3 tbsps good red wine vinegar .
  • 2 tbsps sliced fresh flat-leaf parsley .
  • 1/4 tsp fresh ground black pepper .
  • 3 tbsps sugar

Directions
  • Step #1 Preheat the oven to 400°F.
  • Step #2 Melt the butter in a 12-inch ovenproof saute pan, add the shallots & sugar, & toss to coat.
  • Step #3 Cook over med-heat/flame for 10 mins, tossing every once in awhile, until the shallots start to brown.
  • Step #4 Add the vinegar, salt, & pepper & toss well.
  • Step #5 Place the saute pan in the oven & roast for 15 to 30 mins, depending on the size of the shallots, until they are tender.
  • Step #6 Spice up, to taste, sprinkle with parsley, & serve hot.
