Ingredients
3 tsps salt .
4 3/4-5 3/4 c flour .
2 (14 1/2 oz) packages dry yeast .
1 egg white .
2 c water .
2 tbsps shortening .
1 tbsp water .
1 tbsp sugar
Directions
Step #1 In a bowl mix 3 c flour, salt & yeast, sugar, mix well.
Step #2 In a small sauce pan heat 2 c water & shortening until very warm.
Step #3 Add warm mixture to flour mixture, mix on lowish speed until moistened & then for 3 min on medium speed.
Step #4 By hand stir in the an extra 1 1/2 - 2 1/4 c flour to form a stiff dough.
Step #5 On a floured surface, knead 1/4 - 1/2 c flour until dough is smooth & elastic, about 8 min.
Step #6 Place in a greased bowl, cover loosely with greased plastic wrap & a cloth towel.
Step #7 Let rise in a warm place until light & doubled in size, about 45-60 min.
Step #8 Grease a large cookie sheet.
Step #9 Punch the dough down several times to remove all air bubbles.
Step #10 Divide the dough in half & then divide each half into 3 equal parts.
Step #11 Roll each part into a 14 inch rope.
Step #12 Braid the 3 ropes, sealing the ends.
Step #13 Place on greased cookie sheet.
Step #14 Repeat with other dough half.
Step #15 In a small bowl mix 1 tbsp water & the egg white, beat slightly.
Step #16 Carefully brush over the loaves.
Step #17 Cover up, let rise in a warm place until light & doubled in size, 20-30 min.
Step #18 Heat over to 375.
Step #19 Uncover the loaves, brush again with egg white mixture.
Step #20 Bake for 25-30 min or until golden brown.
Step #21 Remove from oven & cool on wire racks.
