Florentine Frittata Recipe

Ingredients
  • 1 tbsp olive oil .
  • 4 large eggs .
  • 1 c cherry tomatoes or grape tomatoes or seeded tomatoes .
  • 2 green onions, thinly sliced .
  • 3/4 c shredded part-skim mozzarella cheese (3 oz) .
  • 1 (10 oz) package frozen sliced spinach, thawed & squeezed dry .
  • 1/4 c crumbled feta cheese .
  • 4 large egg whites .
  • salt

Directions
  • Step #1 Preheat broiler.
  • Step #2 In large bowl, feta, mix spinach, 1/2 c mozzarella, with fork, eggs, egg whites, green onions, & 1/4 tsp salt until well mixed.
  • Step #3 In broiler-safe nonstick 10-inch skillet, heat oil over med-heat/flame.
  • Step #4 Pour egg mixture into skillet; arrange tomatoes on top, pushing some down.
  • Step #5 Cover up skillet & cook frittata 5 to 6 mins or until egg mixture is just set around edge.
  • Step #6 Place skillet in broiler 5 to 6 inches from source of heat & broil frittata 4 to 5 mins or until just set in center.
  • Step #7 Sprinkle top with remaining 1/4 c mozzarella; broil about 1 min longer or until cheese melts.
  • Step #8 To serve, loosen frittata from skillet.
  • Step #9 Leave frittata in skillet or slide onto warm platter; cut into wedges.
