Spring Tortellini With Pesto Recipe

Ingredients
  • 1/4 c pine nuts, toasted .
  • 1 lb fresh asparagus .
  • 1 (7 oz) container basil pesto .
  • 1/4 tsp salt (or to taste) .
  • 1/2 tsp grated lemon rind .
  • 2 (9 oz) packages put in the fridged cheese-filled tortellini

Directions
  • Step #1 Snap off & discard tough ends of asparagus; cut asparagus into 2-inch pieces.
  • Step #2 Prepare tortellini according to package directions; add asparagus pieces to pasta water during the last 2 mins of cooking; drain.
  • Step #3 Pour off any excess oil from top of pesto container; In a large bowl, pesto, toss the tortellini mixture, lemon rind, & salt together.
  • Step #4 Sprinkle top with pine nuts & serve as soon as possible.
