Cinnamon Walnut Granola Recipe

Ingredients
  • 1 c walnuts, sliced .
  • 1 tbsp vanilla .
  • 1/2 c olive oil .
  • 1/2 c honey .
  • 1 c golden raisins .
  • 1/2 c ground flaxseed .
  • 1/2 tbsp cinnamon .
  • 1/2 c brown sugar or sucanat .
  • 7 1/2 c rolled oats

Directions
  • Step #1 Preheat oven to 275°F In big bowl, raisins, mix oats, nuts & flaxseed.
  • Step #2 In microwavable bowl, oil, mix together brown sugar, honey & cinnamon.
  • Step #3 Cook on high in microwave until mixture starts bubbling.
  • Step #4 Remove, add vanilla & stir.
  • Step #5 Pour over oat mixture & mix well.
  • Step #6 Thinly spread on baking sheet(s).
  • Step #7 Bake for 15 mins.
  • Step #8 Stir, return to oven for addt’l 15 mins or until oats are toasted.
  • Step #9 Cool thoroughly.
  • Step #10 Store in airtight container.
  • Step #11 I keep in fridge if not eaten right away.
  • Step #12 You could also pack into a pretty container & give as a Christmas gift.
