Ingredients
1 tbsp peanut oil or vegetable oil .
sliced dry roasted peanuts .
2 tbsps lime juice .
1 tbsp light soy sauce .
Garnish .
2 boneless skinned chicken breasts, cubed .
3/4 tsp salt, divided .
1 tsp grated fresh ginger .
1 1/2 c fresh sugar snap peas, trimmed .
1 tsp dark sesame oil .
2 tbsps creamy peanut butter .
1 c reduced-sodium fat-free chicken broth .
1 red bell pepper, cut into thin strips .
2 tbsps sweet chili sauce .
1 tbsp light brown sugar .
1 c uncooked jasmine rice .
1/2 tsp cornstarch
Directions
Step #1 Cook rice according to package directions.
Step #2 Sprinkle top chicken with 1/2 tsp salt.
Step #3 Whisk together chicken broth & next 7 ingredients; set aside.
Step #4 Heat oils In a large-ish nonstick skillet or wok over high heat 1 to 2 mins or until hot.
Step #5 Add chicken, & stir-fry 5 mins or until chicken pieces are browned & no longer pink inside.
Step #6 Add peas, bell pepper, & remaining 1/4 tsp salt; cook 2 mins, stirring often.
Step #7 Stir chicken broth mixture, & add to skillet; bring to a boil.
Step #8 Cook, stirring constantly, 2 mins or until thickened.
Step #9 Serve over rice; garnish, if desired.
Step #10 Serves 4.
