Chicken Breasts With Lime Curry Sauce Recipe

Ingredients
  • 1/2 tsp garlic powder .
  • 1/4 tsp pepper .
  • 1 1/2 tbsps curry powder .
  • 4 tbsps butter .
  • 1 tsp salt .
  • 2 tbsps fresh lime juice .
  • 2 c light cream .
  • 6 boneless skinless chicken breast halves .
  • 1 tbsp flour .
  • 1/2 c sliced onions .
  • 1 1/2 c tomatoes, seeded & sliced

Directions
  • Step #1 In a large skillet, melt 2 tbsps of butter over medium-high heat.
  • Step #2 Add chicken, until golden, turning once, sprinkle with garlic powder & cook, 3-4 mins per side.
  • Step #3 Remove to a plate & set aside.
  • Step #4 In the same skillet, melt remaining 2 tbsps of butter.
  • Step #5 Add onion, curry powder, salt & pepper.
  • Step #6 Cook, stirring, 3 mins, or until onions are tender.
  • Step #7 Stir in flour; cook, stirring, 1 min.
  • Step #8 Stir in lime juice & light cream.
  • Step #9 Heat to boiling, stirring every once in awhile.
  • Step #10 Reduce heat to low & let simmer 7-8 mins, or until sauce has thickened.
  • Step #11 Remove from heat.
  • Step #12 Spoon sauce over chicken breasts & top this with a sprinkling of tomatoes & lime slices.
  • Step #13 Serve with hot cooked rice.
